Chicken Veggie Quesadillas – Cost for a 5 person family $14.62. There are cheaper ways, but this produces a hefty amount.

Ingredients:    

 

  1. 1 package of frozen Chicken Pieces, chopped small and bite size. (Cook these beforehand for almost an hour. $8.00)
  2. ¾ cup salsa, mild or hot depending on how you like it. (You can leave this out if you buy the soup with the salsa already added. $.35 for a portion of the entire container at $1.50)
  3. 1 can of  Cheddar cheese soup. (They also have a salsa cheese soup or broccoli and cheddar cheese soup that you can substitute.$1.39)
  4. ½ package of shredded cheese for more volume and cheesy flavor. (about $.90 of the entire package at $1.75).
  5. 1 package of soft taco shells (in the refrigerator section for $.99).
  6. Package of Any type of rice mixture your family likes ($.99).
  7. Package of frozen broccoli, cauliflower, and carrots. (2.00).

 

Cook your frozen chicken for 1 hour at 350 degrees. Make sure chicken is cooked thoroughly and that juices run clear. 

While cooking the chicken, boil your frozen veggies on the stove, until they are soft all the way through or they are floating at the top of the water line.

Start cooking your rice as you begin the main dish. Most varieties will cook in a matter of minutes. Any rice mixture will do because not all families like certain varieties.

In a large pot or skillet, combine these items over medium heat:   cheese, cheese soup, salsa, chicken in bite size chunks, veggies, and seasoning to taste (salt, pepper, garlic powder).  

Cook the soft taco shells so they become warm but still soft in the oven or microwave.

Fill the soft taco shells with your new cheese mixture, add the rice to the plate and you are finished with your economical tasty meal.
